Hiya Jinx,

On low powered flash tubes I believe it does not matter too much, BUT on
high powered yes it does.

When the arc starts, it starts with a fair force, which lifts parts of the
coating off the Cathode, and deposits this on the anode and the tube body.
If you use the anode, you quickly start to burn it away.
