Speaking of one-wire devices......

       Does anyone here have any idea as to what the maximum cabling length
can be, between the controller (16F877) and the device (DS18S20)?

It depends upon the cable type you use.

From application note 132:

For up to 5m the cable type is non-critical.
Regular UTP is good for 25m
Cat-3 is good for up to 125m
Cat-5 is good up to 300m
With specialized line drivers Dallas claims you can go to 600m
