I have an ancient MC705K1 driven device and I want to
evolve it into a 16F84 driven device with the novelty
of source control, and direct 7SEG drive capability.

I hooked up an old EVM system and seemingly extracted
an image.  Then I ran it through Dave Dunfield's
disassembler with dismal results.

Are there any better tools, especially any cross-assembly
efforts?!

UMPS contains all you need, the eval version integrate
an unlimited assembler/disassembler for ALL simulated
microcontroller, including PIC and HC05.
