I have a need for my PIC 16c72 to oscillate a pin at set frequencies.
This pin must toggle at adjustable frequencies, while running my full
program. I need frequencies up to 5k Hz.
Timer? Interupt?

Yes. Study the Timer and CCP Module sections in the data
book... It's pretty easy to do what you want.
