Is there any place I can check and find out what PIC chips are
currently being manufactured?  Reading through the data sheets
I saw the 16C63, which is perfect for a project I am currently
working on (An electrical scoring box for fencing).  However,
Digi-Key doesn't seem to carry it and I'm not even sure it's
in production.

Offhand, I'd suggest trying your local Microchip rep.  The Florida
