I'm trying to locate references / information on how to output to a TV that
has a standard video input.  I've found some info about the MC1377 chip, and
a few small sites that described basically how to do black and white output,
but I was hoping for some more detailed information on how to take my
letter/number/symbol and output it in whatever color I want to a composite
monitor/TV.

If anyone has any references or suggestions, I would love to hear it.  I
normally use LCD's, but I kinda want a "larger" picture on this one ;)

I assume you are trying to do this from a PIC, in which case you need to
chase up the Pong game someone did. Thought I had a link, but don't.

If you are wanting to do it from a video card, then 800x600 resolution is
extremely close to both US and European TV rates.

Well, what I'd like to do is output information to a video handling circuit.
I've read about pong, and unfortunately, it is all black and white, and it
still seems that he said a lot of time was spent in video processing - I
need my chip available for other stuff.

I'm thinking some sort of video circuit where it would know what mode it was
in (graphics or text) and I could fill a specified block of ram with my data
and it would spend the time drawing to the screen.

I just don't know how to do this right.  :)

Unfortunately this kind of thing should be done step by step.

First you learn how to do the composite video sync, then you create the
interlaced stable "odd black" - "even white" video signal, then, you draw a
big rectangle in middle of screen, then, you learn how to calculate sine(x)
and produce a big nice round circle, then you can go for characters drawing
and character generators, then, after you have absolute knowledge about it,
including plenty of available processing power in between vertical retrace,
perhaps it would be time for color burst signals and such.

A good search on the web should find this.  I found it back in 2000.  If I
can find my notes I will forward the web address.  It was a little PIC based
circuit for putting graphics and text onto a TV.

I was going to suggest the ST5730A when I saw the original post last night
but it was obsoleted with production ending November a year ago and ST had
no plans for a replacement chip.  If anyone knows of something similar I
would like to know about it too.  There was a small company in the UK called
blackbox that made a few PIC based products all based on this video chip but
their business appears to have ended because the chip is no longer
available.  I tried to order a couple of hundred myself last fall but was
unsuccessful.

I suggest you visit http://www.stv5730A.co.uk and have a look at the
16F84/628 on screen display project board.  There is a section on this
site that deals specifically with converting LCD output routines to
display on a TV screen.

Features:

FYI to the best of my knowledge the STV5730A is still widely available

I think you are correct here. If it is going to be done with minimal chips,
it will need to be got together in stages.

I think you are going to end up with multiple processors here, at least two.
One doing a pong like video generation, possibly locked to an external sync
source, and the other doing the pattern modification and whatever other
processing you want. I would also suggest moving to an 18f252 or 18f452 to
get the faster clock speed and 16 bit instruction set. Depending what other
processing you want, you may just get away with one of these.

As an extra on the 18f series, you can use a colour burst crystal as the
frequency source, and use the 4x PLL to have a reasonable speed processor
that will be reasonably closely synchronized to the TV scan rates :)
