If I leave the PC running but not doing anything, it does not lock up.

Try switching to 640x480x16 colors and see if the problem disappears. I had
hellish problems for quite a while and it was from upgrading IE and not
also getting the latest video drivers from the manufacturer's website(ATI).

I have also seen this type of problem when the machine attempts to wake up
from an idle state.  You might want to use the control panel power
management applet to turn off your power management features and see if your
problem goes away.
