Try the Honeywell HIH3605 - mind you it is an expensive beasty but it gives
you what you're looking for.
I'm looking at using a device from IST but have to do the interface stuff
myself - so if anyone out there has some experience to share I'd appreciate
it.

Honeywell (http://www.honeywell.com) has a HIH3610 RH
to voltage device.

Dallas has put this on a small (0.6 inch diamter) PCB
with a DS2438 battery monitor such that one can use
their 1-W interface to read RH and temperature.  Part
DHS01K.  It is $20 from their i-Buton store

I've used the HC-600 from ohmic instruments,
http://www.ohmicinstruments.com/, 1(800)626-7713. A little pricey but we
had no problems with them. One resistor and cap is all we needed to
ibterface to PIC16C72.
