This is what I have.....

LIST P=18F8525
#include <P18F8525.INC> ; File contains addresses for register and bit names
__CONFIG _OSC_HS_1H & _OSCS_ON_1H & _PWRT_ON_2L & _BOR_ON_2L

But I get this error

Argument out of range (not a valid config register address)

I'm sure its just something simple....just not seeing it right off

The syntax for config stuff is usually something like:
__config <address> , <parameters>

You have left off the address and the comma. See the datasheet and the inc
file for examples of the address.

In 6.x of MPLAB, the configure->Processor menu selection overrides the P=
directive.  Are you sure that you have selected the correct processor?  Are
there warnings you get before the argument out of range?

Just a guess but did you format the config stuff like this?

       __CONFIG _CONFIG1H, _OSC_HS_1H & _OSCS_OFF_1H
       __CONFIG _CONFIG2L, _BOR_OFF_2L & _PWRT_OFF_2L
       __CONFIG _CONFIG2H, _WDT_OFF_2H
