Almost any sensor can be interfaced to the PIC given the correct signal
conditioning.  Strain gauges are resistive in nature and have fairly small
changes in resistance with strain so you will almost certainly need some
amplification before feeding it into the PIC.  Interesting subject you chose
to post under!
