Related question ... I just want to know what to use to measure a
domestic cooking oven ... that's a mere 300C maximum. The DS1820 tends
to melt, I think.
I'd like to more accurately regulate the temperature.

A Platinum RTD might be a good choice. You need an op-amp to bring the signal
up to a useable level. But you can get inexpensive ones (< $10) and they are
quite stable.

Hi,
Thermocouple is not good for this temperature range :
1. Small output
2. Need cold side compensation.
I sugested Platinum RTD.
PT-100 or PT-500. Ju need only drive it with current
source and measure voltage on it.
These devices at +266 oC doubles his resistance.
PT-100 is 100oM at 0 oC , PT-500 - 500oM at 0 oC.
